Mom’s Meatloaf

Directions

  1. Preheat oven to 350 degrees. In a large bowl combine all ingredients except for the ketchup.

  2. Fold mixture into a 9½ × 5½ × 3 inch Teflon-coated loaf pan. Shape the top of the loaf like a loaf of bread, sloping the sides. Press an indentation down the center top of the loaf lengthwise, to capture more ketchup on top.

  3. Squeeze a generous quantity of ketchup over the loaf, filling in the top and completely covering the meat (it may be more than 1 cup — I never measured!).

  4. Place in the center of the oven and bake for 1½ hours. Ketchup should be slightly brown and juices bubbling. Let stand for 10 minutes before slicing into thick slices. HINT: place a square of heavy aluminum foil on the rack below the loaf pan to catch spills.

  5. Always serve with homemade mashed potatoes, 2 packages brown gravy mix prepared with a little red wine added to the gravy, green beans, and hot, crusty French baguettes to round out the meal!
