Mom’s Creamed Onions

Directions

  1. To peel fresh onions, cut a slice off one end; place onions in a pot with water to cover. Bring to a boil; remove from heat and cool slightly. Skins should slip off easily.

  2. Place back in water; simmer until tender; drain well.

  3. Meanwhile in a heavy saucepan melt butter. Gradually stir in flour until smooth. Cook over low heat, stirring constantly, 5 minutes, and set aside.

  4. In a small saucepan, scald cream. Gradually whisk or stir into butter mixture; add seasonings; stir until thick and smooth.

  5. Add onions, heat through. Serve.
